Our invitation is not merely about tasting, it is also about understanding the philosophy, the process, and the passion behind each bottle.
The incredible diversity of Portuguese wines
Portugal’s wines are as rich and varied as its landscapes, a testament to a tradition that spans centuries, yet is vibrantly alive with innovation. Even though our country has a deep-rooted winemaking heritage, it is witnessing a renaissance, thanks to a dedicated community of winemakers who are rewriting the rules with organic, natural, and biodynamic practices. This movement wants to honor the earth and respect the intricate balance of nature, while delivering wines of exceptional quality and character.
The diversity of Portugal’s wines is unparalleled, a direct reflection of the country’s wide array of microclimates and terroirs. However, it’s not just the geographic diversity that sets Portuguese wines apart, it’s the spirit of innovation and freedom that flows through the winemaking community. Unlike the more regimented traditions of some of our European neighbors, for instance France or Italy, Portuguese winemakers often operate without the constraints of strict systems and expectations. This freedom allows for a level of experimentation and creativity that is rare in the wine world.
Organic winemaking in Portugal is not just a trend but a return to ancestral practices, adopting methods that avoid synthetic pesticides and fertilizers to foster healthier vineyards. Natural winemaking takes this philosophy further, minimizing intervention in both the vineyard and the winery to let the grapes and the land speak for themselves. Biodynamic practices elevate this ethos, incorporating cosmic rhythms and holistic farming techniques to create wines that are vibrant expressions of their terroir.
In Lisbon, the heart of Portugal’s cultural and gastronomic scene, this renaissance can be felt (and sipped!) in a more pronounced way than anywhere else in the country! Through some of the city’s bars, restaurants, and wine shops, Lisbon has become a gateway to the diverse and innovative world of Portuguese wines, without forgetting international labels too.
Wine trips around Portugal
Portugal may be compact in size, but its wine experiences are quite vast, offering an astonishing array of tastes and terroirs within just a few hours’ drive from one region to another. This unique characteristic makes Portugal an ideal destination for wine enthusiasts looking to immerse themselves in the world of viticulture without the need for extensive travel. From the unique microclimate of the Azores, namely of Pico island, where volcanic soils impart a distinct minerality to the local varietals; to the sun-drenched plains of Alentejo, known for its full-bodied, aromatic wines; passing by the rugged landscapes of the Douro Valley, where terraced vineyards yield some of the world’s most exquisite ports and robust reds; to the cool, maritime influenced vineyards of Vinho Verde in the Minho, Portugal’s wine regions offer a microcosm of the world’s viticultural diversity.
At Oh My Cod Tours, we understand the allure of Portugal’s wine varieties and have crafted multi-day trips designed to showcase the best of what this wine-lover’s paradise has to offer. More than focusing on just tastings, our tours are immersive experiences that connect you with the soul of Portuguese winemaking. Our multi-day wine trips are tailored to showcase the diversity of Portuguese wines, including organic, natural, and biodynamic selections that embody the essence of sustainable viticulture. We partner with passionate winemakers who are eager to share their stories, their processes, and their wines with curious travelers. These intimate encounters offer an authentic glimpse into the life of Portuguese vineyards, from the ancient traditions that have shaped winemaking in the region (such as talha wine from the Roman days) to the innovative practices that promise a sustainable future for Portuguese wine.
Our multi-day wine trips are designed for those who seek to dive deep into the world of wine, uncovering the nuances of each region, grape varietal, and winemaking philosophy. It’s an adventure that promises not only the discovery of new flavors and techniques but also an understanding of the ecological and cultural significance of wine in Portugal.
Lisbon: a microcosm of Portugal’s wine heterogeneity
Here in Lisbon one can have an unparalleled opportunity to journey through the entire wine spectrum of Portugal. This city has become a focal point for wine enthusiasts, offering a curated collection of wine bars that serve as gateways to the vineyards scattered across the country’s diverse landscapes. At Oh My Cod Tours, we’ve explored, tasted, and conversed, distilling our experiences into a list of our favorite Lisbon establishments for organic, biodynamic, and natural wines, each bringing a selection from passionate Portuguese producers, as well as from some other countries near and far.
Before we embark on this curated tour of Lisbon’s wine bars, let’s look into understanding the essence of the wines they serve, clarifying the concepts behind organic, natural, and biodynamic wines, so that we have some foundational knowledge that will enhance the appreciation of the establishments we’re about to explore.
Understanding organic, natural, and biodynamic wines
In the world of wine, terms like organic, natural, and biodynamic are not just trendy labels but signify deep-rooted philosophies that reflect a commitment to sustainability, authenticity, and harmony with nature. As we explore the vibrant wine culture of Lisbon, it’s crucial to understand these concepts, as they shape the character of the wines you’ll encounter in the city’s bars we recommend below.
What is organic wine?
Organic wine is the product of a viticulture and winemaking process that abstain from the use of synthetic chemicals, fertilizers, pesticides, and herbicides. Instead, organic winemaking relies on natural substances and physical, mechanical, or biologically based farming methods to maintain soil health and combat pests. This approach ensures that the vineyards thrive in a balanced ecosystem, leading to the production of grapes that truly reflect their terroir. The certification of organic natural wine varies from country to country, but the underlying principle remains the same: minimal intervention in nature’s process, from soil to bottle
What is natural wine?
Natural wine takes the concept of minimal intervention a step further. It’s not only about how the grapes are grown but also about how the wine is made. Natural winemaking involves little to no addition of sulfites (used as preservatives), native yeast fermentation, and a hands-off approach in the cellar. This means no filtering, no fining, and no adjustments to alter the wine’s natural course from grape to glass. The result is a wine that is a raw, unadulterated expression of its origin, with unique flavors and textures that challenge conventional palates. It’s important to note that while all natural wines are organic by nature, not all organic wines meet the stricter criteria to be considered natural.
The difference between organic and natural wines
Now that we know what is natural wine, let’s look at the main distinction between organic and natural wines, that lies in the winemaking process. While both prioritize the use of organically grown grapes, natural wines go further by advocating for minimal technological intervention during winemaking. This hands-off approach aims to preserve the wine’s natural characteristics and complexity, offering drinkers a unique, sometimes unpredictable experience.
What are biodynamic wines?
Biodynamic winemaking is the most holistic approach, incorporating organic farming principles while also treating the vineyard as a self-sustaining ecosystem. Inspired by the ideas of philosopher Rudolf Steiner in the early 20th century, biodynamic agriculture views the farm or vineyard as a living organism. It employs natural materials, soils, and composts to rejuvenate the vineyard and relies on lunar and cosmic cycles to guide farming activities. Biodynamic wines are, therefore, the epitome of terroir expression, crafted under a regimen that respects the interconnectivity of the earth, plants, animals, and the cosmos.
As we venture into Lisbon’s wine bars, equipped with this knowledge, we can appreciate the depth of passion and philosophy that goes into each bottle of organic, natural, and biodynamic wine. These wines tell stories of the earth, narrated through the meticulous care of those who cultivate and craft them.
Where to drink (and buy) organic and natural wines in Lisbon
We’re happy to share that Lisbon has a very good (and ever growing!) variety of bars and restaurants specializing in organic, natural, and biodynamic wines. These are lively spots to mingle with fellow wine enthusiasts. And, more than venues which serve exceptional wines, these bars also promote conversation and provide an education and a certain level of connection to the global movement towards more conscientious consumption.
For an easier exploration, venues which serve wine have been marked with 🍷, while actual stores to buy and take away (more towards the bottom of this list) have been labeled with 🍾. Some of these establishments are places where you can both take a seat to enjoy wine by the glass, as well as purchase full bottles to take home.
🍷🍾 Black Sheep
Hands down, one of our favorite wine bars in Lisbon, Black Sheep has become a national reference for those in pursuit of organic, natural, and biodynamic wines. What sets Black Sheep apart is not just its impressive selection of wines but the story of its founders, a group of wine enthusiasts and sommeliers who turned their passion into a thriving hub for like-minded individuals. This Lisbon wine house was initially founded by Brian Patterson, who eventually sold the business to Bruna Ventura who used to work with him, and who now runs Black Sheep with her husband Lucas Ferreira.
The ambiance of Black Sheep reflects its name: distinctive, unconventional, and embracing of difference. The former owner and the current managers, who are self-described “wine geeks”, share the vision of running a space where the complexity and diversity of sustainable wines could be explored and celebrated in a relaxed, welcoming atmosphere. This wine bar offers a meticulously curated selection that showcases the best of organic, natural, and biodynamic winemaking from Portugal and beyond. The staff’s ability to tell the story behind each bottle adds a personal touch to the experience, making every visit super engaging. It’s probably the most educational wine bar in Lisbon!
Bruna and Lucas from Black Sheep collaborate with Oh My Cod Tours, namely during our dinner and sunset boat experiences on the Tagus River, which we operate specially for big groups. This collaboration highlights the natural wine bar’s expertise and its contribution to Lisbon’s gastronomic tourism, offering guests an unforgettable journey through Portugal’s vinous landscape aboard a scenic cruise.

This esteemed wine bar, along with its sibling Senhor Manuel right across the street, has carved a niche in Lisbon’s culinary scene, drawing in both locals and travelers with its unique approach to natural wine tasting and botanical cuisine, by the hand of Canadian chef Stéphanie Audet. Their creative plant-based dishes are as visually stunning as they are flavorful!
Both venues were founded by the chef and her husband and sommelier Marc Singh Davidson. The couple’s shared passion for natural wines and plant-based gastronomy inspired them to create a concept that resonates deeply with the ethos of sustainability and innovation.
The selection of wines at Senhor Uva and Senhor Manuel is a curated journey across the globe. This international wine list has been carefully assembled, including national references too, and overall highlighting small producers who share the establishment’s dedication to authenticity and environmental care. 🍾 Os Goliardos
Founded in 2005 by Nadir Bensmail, Sílvia Mourão Bastos, and Manuel Amaral Beja, Os Goliardos was born with the mission to showcase and commercialize natural wines from across Europe. This initiative was driven by a close relationship with producers from various countries, aimed at celebrating wines produced by individuals rather than corporations, those who nurture the soil, grapes, and cellar without chemicals and with minimal intervention.
The journey of Os Goliardos began with the launch of wine courses in 2005, designed for the curious and open-minded, creating a vast network of Goliardos – typically individuals not initially connected to the wine industry but who were drawn to the spirit, ethics, and knowledge shared. In 2006, the opening of the Goliardos wine bar in Lisbon near Praça da Alegria marked a significant step, creating a space for wines previously overlooked in Lisbon, where large gatherings and celebrations took place. The momentum continued with the introduction of the Goliardos Academy in 2007, offering monthly wine discovery opportunities for home enthusiasts. By 2008, thematic wine tasting nights, known as the “1001 nights,” were initiated, further expanding the community’s engagement with diverse wine themes. 2009 saw the creation of the Amálgama group, facilitating discussions among various wine producers and professionals.
2010 was a milestone year with the launch of “Vinho ao Vivo,” the European Terroir Festival, in collaboration with A Margem, celebrating the essence of terroir-driven winemaking. This event underscored Os Goliardos’ commitment to showcasing wines that truly represent their origins. Following this, in 2011, the Uvelhas Negras wine collection was introduced, a collaboration with producers to create wines that embody the fresh and distinctive style of Goliardos, albeit in small quantities. In 2014, the decision was made to close the Goliardos bar to dedicate more time to other areas, particularly distribution and advising various city restaurants and bars.
Os Goliardos keeps on expanding its reach, developing exports in Spain and Italy and continuing to import unique wines, mainly exclusive to Portugal, from various countries. Their commitment to wine education through courses, distribution to character-driven restaurants, and the organization of wine events, including Vinho ao Vivo and Vini Corsari, further solidifies their role in the wine community.

🍷🍾 Comida Independente
Comida Independente has carved out a specific niche in Lisbon’s culinary landscape. Prior to opening the specialty grocery story and all through its years of operation, its owner has traveled and keeps on exploring the Portuguese map, with the aim of discovering small producers and bringing their products to the capital city. These food and wines are then showcased in their permanent store and bar, as well as via their producers’ market (Mercado Produtores), held every Saturday between 10AM and 2PM, at Travessa Cais do Tojo, downtown.
This brand’s mission to showcase the immense variety of Portuguese wines indeed goes beyond their wine shop and the actual market. At the store, they host regular events that bring together producers from every corner of the country, via an intimate platform for wine lovers to explore unique varietals, learn about winemaking processes, and engage directly with the minds behind the bottles. Also central to Comida Independente’s mission is the promotion of small producers through Alcateia, a wine club that puts the spotlight on the unsung heroes of Portuguese winemaking. This innovative club not only facilitates home delivery of a curated selection of wines each month but also enriches the experience with educational written materials. Members gain insights into what they’re drinking, the story of each producer, and the specificities of each region, making every sip a learning opportunity.
Just like the wines, the food at Comida Independente is also a celebration of local and seasonal ingredients. Their shop sells fresh produce and Portuguese artisanal packaged foods, while their deli counter features a great variety of regional cheeses and charcuterie, as well as freshly prepared bites that showcase the best of what’s available. We truly appreciate their work as, thanks to Comida Independente’s shop and market, us city dwellers get to feel a little closer to the Portuguese countryside and all of the incredible food and wines that it produces.

🍷 SEM
SEM elevates the concept of dining in Lisbon to an art form, merging the realms of a restaurant and a gastronomic experience with a profound dedication to natural wines. Far surpassing the typical wine bar, SEM is a sanctuary for those who seek to indulge in culinary creations that are delectable and responsible. The philosophy that guides SEM’s wine selection is a reflection of the team’s values: “We serve wines we love to drink. Produced by people, not corporations, who care for the soil, grape, and cellar without chemicals and with minimal intervention. And within each bottle is an expression of that small patch of land and the personalities of those who let winemaking take its natural course.”
At the core of SEM is a commitment to regeneration and responsibility, not just in the wines it selects but in every aspect of its operation. The restaurant is a fervent advocate for organic food, with a significant majority of its ingredients sourced from regenerative agriculture producers with whom the team has built strong relationships. This approach ensures that SEM’s culinary offerings are not only sustainable but also a direct reflection of the land’s bounty.
SEM’s tasting menu, comprising eight moments, is a testament to the creativity and adaptability required to work exclusively with what is available at any given time. This limitation is not seen as a constraint but as an opportunity to craft a menu that genuinely mirrors the happenings in the field. The result is a dining experience that evolves in symbiosis with Portugal’s micro-seasonal changes, offering guests a unique insight into the natural rhythm of local agriculture.
In embracing regenerative agriculture, SEM not only prioritizes the health of the planet but also promotes the flavors and quality that can only come from ingredients produced with care and respect for the environment. The restaurant’s focus on natural wines complements this philosophy perfectly, offering guests a selection of beverages that are as thoughtful and conscientious as the food on their plates. Because the menu at SEM is subject to constant transformation, we love to take this as an open invitation to come back time and time again, to explore the depth and diversity of Portuguese agriculture and its flavors.

🍷 Locals and Nomads
Locals and Nomads offers an immersive experience into the diverse world of natural wines.
It is both a wine bar and shop which transcends its physical space in Graça, with an online store (which delivers all throughout the EU and the UK) that has a staggering selection of over 150 natural wines, Pét-Nat, ciders, and more.
Locals and Nomads modus operandi is built around the idea of discovery and exploration. They focus on showcasing emerging talent and lesser-known gems.
Mini tastings at Locals and Nomads offer an intimate and educational dive into the world of terroir-driven winemaking. These sessions are about tasting wine, but also about expanding your wine knowledge and understanding the intricate dance between vine, soil, and climate.
Complementing the wine experience, a selection of delightful snacks ensures that your taste buds are well catered to while visiting. The menu, like their wine list, focuses on quality and simplicity, providing the perfect accompaniment to your wine of choice. Whether you’re exploring the nuanced world of natural wines from the comfort of your home or soaking up the vibrant atmosphere of their Graça bar, Locals and Nomads invites you to join their community of wine enthusiasts!
